Ingredients
- One zucchini
- One summer squash
- One large onion
- Pasta – of your favorite shape
- Extra virgin olive oil or OOBO
- Parmesan cheese – optional
Directions
- Add water to pot and heat to boil
- Cook pasta according to box directions
- While doing steps 1 and 2, start on the sauce by chopping an onion
- Sauté onion in EVO or OOBO
- Slice zucchini and squash
- Add zucchini and squash to skillet with onion
- Cook for about 5-10 minutes until zucchini and squash are tender
- Add pasta to skillet and gently combine
- Add a pile of grated parmesan and cracked pepper
- Enjoy!
