Summer Medley

A light delicious treat for when the summer heat strikes.

Ingredients

  • Three cucumbers – sliced
  • Two zucchini – sliced
  • Two yellow squash – sliced
  • Two cups tomato – cut into bite-sized pieces
  • Mozzarella cheese – cubed / optional
  • Maple balsamic vinaigrette – 1/2 cup

Directions

  1. Combine all vegetables, cheese and add dressing
  2. Mix well and serve

*Vegetables can be substituted to any of your choosing.
