A light delicious treat for when the summer heat strikes.
Ingredients
- Three cucumbers – sliced
- Two zucchini – sliced
- Two yellow squash – sliced
- Two cups tomato – cut into bite-sized pieces
- Mozzarella cheese – cubed / optional
- Maple balsamic vinaigrette – 1/2 cup
Directions
- Combine all vegetables, cheese and add dressing
- Mix well and serve
