A light light delicious treat for when the summer heat strikes.
PREP TIME: 10 MINUTES
SERVING SIZE: ten
- 3 cucumbers (sliced)
- 2 zucchini (sliced)
- 2 yellow squash (sliced)
- 2 cups tomato (cut into bite-size pieces)
- mozzarella cheese (cubed) (optional)
- maple balsamic vinaigrette (1/2 cup)
- Combine all vegetables, cheese and add dressing. Mix well and serve. Vegetables can be substituted to any of your choosing.
