Summer Medley
A light light delicious treat for when the summer heat strikes.

PREP TIME: 10 MINUTES

SERVING SIZE: ten

INGREDIENTS


  • 3 cucumbers (sliced)
  • 2 zucchini (sliced)
  • 2 yellow squash (sliced)
  • 2 cups tomato (cut into bite-size pieces)
  • mozzarella cheese (cubed) (optional)
  • maple balsamic vinaigrette (1/2 cup)

 

DIRECTIONS


  • Combine all vegetables, cheese and add dressing. Mix well and serve. Vegetables can be substituted to any of your choosing.
