Simple Summer Quinoa Salad

Never eat anything you can’t pronounce. Except quinoa. You should eat quinoa.

Ingredients

  • Two tbsp coconut oil
  • Two small zucchinis – chopped
  • One large onion – diced
  • Four cloves of garlic – minced
  • Two medium tomatoes – quartered
  • One pint grape tomatoes – quartered
  • One cup white quinoa
  • Two cups of water
  • One tbsp dried italian seasoning
  • One tbsp dried basil
  • Salt & pepper, to taste

Directions


  • Heat coconut oil in a deep skillet or wok over medium heat
  • Add onions, garlic, zucchini, and saute until onions are translucent
  • Add the medium tomatoes, quinoa, water, salt, italian seasoning and basil
  • Let cook for about 15 minutes or until the quinoa is translucent with a white ring around it
  • Keep it covered but stir every couple of minutes to prevent it from sticking to the bottom
  • Add the grape tomatoes and cook an additional five minutes then remove from heat
  • Add salt and black pepper to your tastes and enjoy!

Tips & Tricks

  • Adding black pepper at the very end adds a fresh crunch of flavor to the dish
  • If you use fresh basil instead of dry, add it to the end instead of during cooking!
