Easy Homemade Salsa – Power of Produce

Today we launch the Power of Produce Kids Club. Children in grades K-5 have an opportunity to join the Two-Bite Club by trying a new snack every week, they can earn POP Kids Bucks that can be spent at the market on fresh and healthy produce. Participants at five markets or more for a chance to win a prize. Today we will be trying homemade salsa with market and garden fresh veggies.

Ingredients

  • Four large plum tomatoes (about one pound) – diced (to yield two cups)
  • 1/4 cup chopped white onion
  • Three tablespoons chopped fresh cilantro – optional
  • Two teaspoons minced jalapeño – remove seeds for less heat
  • 1 1/2 teaspoons fresh lime juice
  • 3/4 teaspoon kosher salt – or to taste
  • One small garlic clove – minced

Directions

  1. Combine all the ingredients in a bowl
  2. If you prefer a smoother texture more like jarred-pulse half the salsa in a food processor then combine it with the remaining chunky half
  3. Cover tightly and refrigerate for up to five days
  4. Enjoy
