Never eat anything you can’t pronounce. Except quinoa. You should eat quinoa.
Ingredients
- Two tbsp coconut oil
- Two small zucchinis – chopped
- One large onion – diced
- Four cloves of garlic – minced
- Two medium tomatoes – quartered
- One pint grape tomatoes – quartered
- One cup white quinoa
- Two cups of water
- One tbsp dried italian seasoning
- One tbsp dried basil
- Salt & pepper, to taste
Directions
- Heat coconut oil in a deep skillet or wok over medium heat
- Add onions, garlic, zucchini, and saute until onions are translucent
- Add the medium tomatoes, quinoa, water, salt, italian seasoning and basil
- Let cook for about 15 minutes or until the quinoa is translucent with a white ring around it
- Keep it covered but stir every couple of minutes to prevent it from sticking to the bottom
- Add the grape tomatoes and cook an additional five minutes then remove from heat
- Add salt and black pepper to your tastes and enjoy!
Tips & Tricks
- Adding black pepper at the very end adds a fresh crunch of flavor to the dish
- If you use fresh basil instead of dry, add it to the end instead of during cooking!
