Quinoa Caprese Salad
Tired of the same old salad everyday well shake things up a bit with a quinoa caprese salad.
PREP TIME: 15 MiNUTES
SERVING SIZE: FOUR
- 3-5 ripe tomatoes cubed into bite size pieces (if you want less seeds go with roma tomatoes)
- 2 cups cooked quinoa
- 12 oz. mozzarella cheese from Salt Springs Farm cubed into half inch cubes
- 20 basil leaves chopped very fine
- 8 oz. of maple balsamic vinaigrette from McDivitt Farm may add more to taste
- Add all ingredients into a medium sized mixing bowl and toss together
- Serve cold.
