Quinoa Caprese Salad
Tired of the same old salad everyday well shake things up a bit with a quinoa caprese salad.

PREP TIME: 15 MiNUTES

SERVING SIZE: FOUR

INGREDIENTS


  • 3-5 ripe tomatoes cubed into bite size pieces (if you want less seeds go with roma tomatoes)
  • 2 cups cooked quinoa
  • 12 oz. mozzarella cheese from Salt Springs Farm cubed into half inch cubes
  • 20 basil leaves chopped very fine
  • 8 oz. of maple balsamic vinaigrette from McDivitt Farm may add more to taste

DIRECTIONS


  • Add all ingredients into a medium sized mixing bowl and toss together
  • Serve cold.
