Mint Melon Salad
A summery, 10-ingredient melon salad with melon and mint, paired with cucumber, tomatoes, and onion tossed in a light lime vinaigrette. Refreshing, fiber-rich, and so delicious.

INGREDIENTS


  • 1 thinly sliced cucumber
  • 1 cup tomatoes, mix and match varieties, cut in chunks
  • 1 small onion, thinly sliced
  • 2 tbsp olive oil
  • 4 tsp apple cider vinegar
  • Garlic pepper seasoning to taste
  • 6 tbsp lime juice
  • 2 tbsp maple syrup
  • 2 tbsp olive oil
  • 1 large melon, peeled and cubed
  • 4 tbsp fresh mint

 

 

DIRECTIONS


  • Add cucumber, tomato, and onion to a small mixing bowl and top with olive oil, apple cider, vinegar, and seasoning, toss to combine
  • Taste and adjust flavor as needed, adding more vinegar for acidity or seasoning as needed, set aside
  • Prepare dressing by adding lime juice and maple syrup to a small mixing bowl
  • Slowly stream in olive oil while whisking to combine
  • Taste and adjust flavor as needed, set aside
  • Place melon in a large serving bowl and top with dressing, gently toss to combine
  • Add the cucumber-tomato-onion salad on top, leaving any excess liquid/dressing behind
  • Gently toss to combine and garnish with fresh mint
  • Serve!
  • Best when fresh, though leftovers keep in the refrigerator¬†up to three days
