Early Summer Vegetable Medley

INGREDIENTS


  • 2 tbs olive oil, divided
  • 4 zucchini, diced
  • 2 bell peppers, julienned and halved
  • 1 large or 2 small onions, cut into ribbons
  • 1 bunch scapes, chopped roughly
  • 1 bunch basil, rolled into a chiffonade and sliced

 

 

DIRECTIONS


  • Heat pan and half tablespoon of oil in pan over medium high heat.
  • Add zucchini in a single layer and let sit until browned on one side.
  • Add second half tablespoon of oil and let pan get hot again.
  • Add bell pepper in single layer and let sit until browned on one side.
  • Add third half tablespoon of oil and let pan get hot again.
  • Add onion in single layer and let sit until browned on one side.
  • Add last half tablespoon of oil and let pan get hot again.
  • Add scapes in single layer and let sit until browned on one side.
  • Add onion, bell pepper, and zucchini back to pan with scapes. Toss to combine and reheat. Add basil.
  • (Optional) Deglaze pan with water, soy sauce, and sugar. Pour pan sauce over vegetables.
  • Serve.
